I was in the mood to try something a little different than the typical meat and vegetables dinner we tend to stick to sometimes. It’s Super Bowl Sunday and everyone loves a good Super Bowl recipe. Hence, the Cheesy Chicken Bacon Wraps recipe.
It was a huge hit with my family. Everyone was happy. I mean, how can you go wrong with bacon and cheese? Here’s what I did:
- 8 Chicken tender filets (uncooked)
- 16 slices of bacon
- 1/2 cup cream cheese
- 1 cup fiesta blend shredded cheese
Preheat oven to 450 degrees F.
Pound chicken filets flat to about 1/4 inch or so.
In a mixer, blend the cheese together until mixed thoroughly.
Place a tablespoon (more if you want) of cheese mixture onto one end of the filet. Start on this end and roll it up. You won’t need to worry about toothpicks to keep it together. It will stick.
Take one slice of bacon and roll it around the chicken in one direction. Take a second slice of bacon and wrap it around the chicken in the other direction so the two pieces of bacon form a cross once wrapped around.
Place these on a baking sheet wrapped in foil or I like to use a pan with slots for the grease to drip into an attached bottom catch pan.
Bake for 20 minutes at 450 degrees F. Then flip the cheesy chicken bacon wraps to the other side. Turn the oven temperature down to 350 degrees F. Continue baking for another 10-12 minutes. Then take the pan out and allow the wraps to cool before serving.
